Thanksgiving Food Recipe: Pumpkin Rolls

Thanksgiving. Time to show how grateful you are and to give, give, give! Sometimes the most meaningful gift is something crafted with love and care. That is why you should make delicious treats, rap them up very nicely, add a note with a special message and hand them out to numerous people to brighten their day. Here’s a recipe for this fall season that will definitely show your gratitude towards many  people in your life.

INGREDIENTS FOR CAKE ROLLS🎂:

  • 3/4 cup of baking flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 teaspoon cinnamon
  • 3 large eggs
  • 2/3 cup canned pumpkin
  • powdered sugar (to top it off)

INGREDIENTS FOR FILLING:

  • 8 ounces of cream, room temperature
  • 1 tablespoon of melted butter
  • 1 teaspoon of vanilla
  • 1 cup powdered sugar

INSTRUCTIONS:

  1. Preheat oven to 350° F. Grease a 15 x 10-inch jelly roll pan. Put parchment paper all over the base of the pan leaving some of it sticking out on the ends.
  2. In a median mixing bowl combine flour, sugar, salt, baking soda and cinnamon. Whisk and add the eggs and canned pumpkin until it is very smooth.
  3. Once mixed, poor it into the jelly roll pan. Bake for 18-20 minutes.
  4. When it is done baking, turn the pan upside down on a cutting board with powdered sugar topped on it. Parchment paper should be on the top. Then peel off the parchment paper carefully. With the short edges, roll it up and let it cool.
  5. While the roll is cooling, take advantage of that time and make the filling. Using a stand mixer, whip the cream cheese, vanilla and powdered sugar until it is creamy and light (or however you like it best). Once the roll is cool, unroll it and with a spatula spread the filling. Then roll it up one last time.
  6. Cut it in nice even pieces and put each slice into a nice bag with a message. Your loved ones will be forever grateful!
